Laguiole knives as decoration, needing frequent sharpening
Laguiole en Aubrac is the largest of all the regional forges that make laguiole style knives, so perhaps they would have the better quality control as all these knives are factory made. I would choose whichever you like better, a steak knife like the ones you are looking at are just decoration/jewelry and any of them will cut terribly if you dont sharpen them often, like very often, specially if you use them on ceramic, porcelain, or stoneware plates. So, get whichever you like more.

Soft steel requires frequent sharpening
Site look legit, but never used it. That steel is pretty soft so will need sharpening often if used on a regular basis. I have a handful of clients that bring me sets for touchups almost monthly.
