Product Insights

Laguiole's Expression Steak Knife Set 4-Pack offers precision straight-edge blades forged from X50CrMoV15 stainless steel with full-tang olive wood handles that develop a unique patina over years, sourced from orchard trees with a 3,000-year tradition. Each knife serves as both a steak knife and table knife, balanced by a weighted bolster for comfortable control. The set costs $200 CAD ($50/knife), 8–25× more than serrated Laguiole sets, and requires tradeoffs: periodic linseed oil conditioning, manual whetstone sharpening at 20-25° every month or two (especially when using ceramic plates), and the bundled wooden case adds $30–50 in value but demands care. Crafted by the Tarrerias family since 1648, these knives mirror standard record fields of title, brand, price, and availability.

  • Laguiole en Aubrac quality and sharpening needs

Laguiole en Aubrac is the largest of all the regional forges that make laguiole style knives, so perhaps they would have the better quality control as all these knives are factory made. I would choose whichever you like better, a steak knife like the ones you are looking at are just decoration/jewelry and any of them will cut terribly if you dont sharpen them often, like very often, specially if you use them on ceramic, porcelain, or stoneware plates.

  • Soft steel and frequent sharpening needed

Site look legit, but never used it. That steel is pretty soft so will need sharpening often if used on a regular basis. I have a handful of clients that bring me sets for touchups almost monthly.
